Catalog description
This general education course provides an overview of nutrition and food toxicology with particular emphasis on how course topics relate to quality of life. Course topics include digestion and metabolism of nutrients and toxicants, impact of nutrients and toxicants on human health, basic chemical analysis of food components, and quantitative expression of laboratory results. Basic analytical skills will be applied in quantifying a food-born nutrient or toxicant of particular interest to the student. Helen Hawk Honor's Course. 150 minutes of lecture/discussion. Not acceptable for the major or minor.
