Catalog description

Students will acquire the knowledge and hands-on experience of sustainable cooking and agriculture, conducting life cycle analyses of food systems and evaluating intersections of food justice, history, ecology, nutrition and health. Drawing from both nutrition and sustainable analysis, students will be better equipped to understand where their food and dietary products come from and recognize the ecological and social justice impacts and life-scales of those food supply chains.
