Catalog description

Explores the global relationship between food, health, history, culture, and traditions through topics including nutritional and health requirements, social and religious influences of health beliefs, socioeconomic status, and food choices. Discusses the regional, cultural, and traditional foods and health beliefs of geographic areas and cultures, geographic factors in food availability, global food and health issues, health habits, and nutritional issues of diverse groups. Examines how structural racial and ethnic inequities affect health, disparities, and discusses solutions to address social justice. Prerequisite(s): BIOL 104 or KINE 203 .
