Catalog description
This course will introduce students to biochemical properties of food, food safety, and processing procedures in an experiential manner. Demonstrations using meat products as our medium will serve to help students understand how and why certain ingredients are used, in addition to their long-term effects on the safety, quality, and affordability of food. Current issues in our society relevant to food safety will be explored and discussed as to allow students to become more informed in their food decisions.
