This course will apply the basic sciences to understanding the principles of natural science, primarily as it relates to vitamins and minerals. This information will be used to explore the functions of the micronutrients and their roles in health promotion and disease processes. This course will also encourage and stimulate students to pursue information in the field of clinical nutrition and to develop the student's ability to critically analyze such information.
