In this course students will explore the connection between Hispanic food and culture throughout history. We will start by learning about native peoples' food and culinary practices in the Americas. Then, we will study how these knowledge and practices influenced and were influenced by European culinary traditions during the conquest and by African contributions during the colonial times. Next, we will trace the development of national gastronomies in relation to the political events that took place in the 20th century. We will focus on how different migratory waves, such as the Italian and the Eastern European, contributed to this development. Finally, we will work on emigration and diaspora. We will explore how the Latinx community has shaped the United States gastronomic landscape, and vice versa, in different parts of the country and throughout the generations. The evaluation system will include essays, projects, and oral presentations. This course will be entirely taught in Spanish. Prerequisites: Span 241,249 or 251 (or equivalent). Please contact the instructor if you have questions about the course.
