Catalog description

This course introduces students to applied nutrition assessment through the ABCDE framework (Anthropometric, Biochemical, Clinical, Dietary, Environmental). Students collect, analyze, and interpret nutrition‑related data and communicate findings ethically and effectively. The course integrates motivational interviewing (MI) as a communication strategy to strengthen assessment accuracy and rapport. Students also evaluate how graded exercise testing (GXT) data inform nutrition assessment, with emphasis on energy needs, metabolic health, and fueling patterns. Throughout the term, students design, refine, and complete a population‑specific nutrition screening tool that applies all components of the ABCDE model.
