Catalog description

This course is an upper-level undergraduate course that builds a solid foundation in principles of biochemistry, biology, physiology, and neuroscience in the context of nutrition. Particular focus will be placed on the different types of carbohydrates, proteins, and fats and their relationship with physical and brain health. Nutritional nutrigenomics, the immune system, metabolism, neuroregulation of food intake, substance abuse, the gastrointestinal tract, and the neuroscience of stress will be covered for all pertinent nutrients.
