This course focuses on the concept of Garde Manger. The students will prepare a variety of sandwiches, sauces, salads, and appetizers. It will also include preparing specialty items such as sausage, pickles, crackers, and condiments. Prerequisites: CA1023 Culinary Techniques I Lab and CA1123 Culinary Techniques II Lab.
