Catalog description

Uses food as a critical lens for studying Latin American culture and history and looks at how the evolution of human development, and especially the food that we eat, is influenced by social, political and economic context. Studies the production and commodification of food in Latin America, and its globalization. Also covers how Latin American cuisine sheds light on the formation of cultural identity and perceptions of nationalism.
