Catalog description
Chemistry of Cooking FA5 (3) Whether they know it or not, everyone is a chemist in the kitchen. This course dispels the notion that chemistry is only for the trained and gives students the confidence to experiment in their own cooking. Students explore chemical topics including structure and function, acid/base chemistry, and reaction energetics through the preparation of food. AU Core Habits of Mind: Natural-Scientific Inquiry. Corequisite: CHEM-151. Note: Completion of CHEM-150 and CHEM-151 with grades of C or better fulfills AU Core Habits of Mind: Natural-Scientific Inquiry.
